Ingredients

  • 500 g beef (shank or neck)
  • 2 tablespoons lard or oil
  • 2 large onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon paprika
  • 2-3 carrots, sliced
  • 2 parsnips, sliced
  • 1 green pepper, diced
  • 2 medium potatoes, diced
  • 1 tomato, diced
  • salt and pepper, to taste
  • 1 teaspoon cumin
  • 1 bay leaf
  • 1.5 liters water
  • pinch of hot paprika (optional)

Instructions

Prepare the beef: Cut the beef into small cubes. Then, in a large pot, heat the lard or oil and brown the meat until all sides are nicely browned.

Add onion and garlic: Add the finely chopped onions and garlic to the pot and sauté until the onion becomes translucent.

Seasoning: Remove the pot from the heat and sprinkle with paprika. Mix well to prevent the paprika from burning, then return to the heat.

Add vegetables: Add the carrots, parsnips, green pepper, potatoes, and tomato. Mix thoroughly.

Flavoring and cooking: Season with salt, pepper, cumin, and bay leaf. Pour in the water and bring to a boil.

Slow cooking: Reduce the heat and simmer the soup covered on low heat for about 1.5-2 hours until the meat and vegetables are completely tender. If needed, add more water during cooking.

Serving: Remove the bay leaf and taste the soup. If necessary, add more salt and pepper. Serve hot with fresh bread or dumplings.

Conclusion

Enjoy your meal! Goulash soup is a perfect choice for a chilly day and is sure to be a favorite at the table.
